Meat Free Mondays- Tofu Scramble

Todays Meat Free Mondays recipe is one I love, especially as its something so simple and quick to make but is flavorsome and fits with many dishes. 

This recipe is from the lovely vegan creator Madeleine Olivia. Madeleine has such wonderful, easy and budget friendly plant based recipes that she has available on her instagram, website and youtube- @madeleineolivia and 

I always go to Madeleine's pages when I am looking for some inspiration on what to cook and her recipes never fail me. She is also a wonderful source for minimalism and sustainable tips.

This recipe is tofu scramble, a bit like a vegan version of scrambled egg but also different in its own yummy way. Packed full of protein and veggies this dish is great for on toast, in tacos, with a fry up and much more. 


Tofu Scramble:

3-4 portions


  • 1/2 red onion
  • 1 garlic clove
  • Olive oil
  • 1/2 red pepper
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • Block (400g) of firm tofu
  • 1 tbsp soy sauce
  • Salt and pepper
  • Large handful of spinach

Optional Extras That I love To Include:

  • 2 Large handfuls of mushrooms, finely chopped
  • More Garlic


  1. Chop and fry onion in a pan with olive oil over medium heat until softened. 

  2. Meanwhile, chop the pepper. 

  3. Add the garlic along with the spices and stir fry for a minute or two. 

  4. Add in the red pepper, with a dash of water if needed. 

  5. Crumble in the block of tofu with your hands to create the egg-like texture. Stir in with the soy sauce and seasoning. Fry for around 5 minutes, or until everything is cooked.

  6. Finally add in the spinach and stir through until wilted.

  7. Serve over toast for breakfast, or alongside rice and potatoes for a lunch/dinner meal.
